"One of the founders of bacteriology, Pasteur is at the same time one of the greatest figures in the history of medicine. His work on fermentation, the doctrine of spontaneous generation (which he exploded), virus diseases and preventative vaccinations, was fundamental. Although Pasteur's method of preserving wine by partial heat sterilization ("pasteurization") turned out to be a revival of Appert's invention, Pasteur did rescue the method from oblivion and established on the basis of rigorous scientific experiments what had been only a poorly tested and entirely empirical technique" (Morton's Medical Bibliography, Fifth Edition, Edited by Jeremy M.
